Vegan Pumpkin Quinoa Pancakes

1/2 cup unsweetened almond milk
1 tsp cream of tartar
2 tsp flaxseed meal (ground flax seeds)
2 tbsp water
1 cup quinoa flour
1/2 pumpkin puree
2 tbsp pumpkin pie spice
2 tbsp extra virgin coconut oil
1 tbsp vanilla extract

Filling
8 oz tofu cream cheese
2 tbsp date syrup (we used maple syrup)
pumpkin pie spice
dash of vanilla extract
