Preheat the oven to 400 degrees Fahrenheit.
Peel the garlic cloves. Mix the white wine and olive oil.
Put the garlic on a sheet of parchment paper and place on a baking sheet.
Pour the olive oil and white wine over the garlic. Then, sprinkle with sea salt and finally add the fresh rosemary.
Fold the paper to close and put the baking sheet in the oven.
Roast the garlic for approximately 15-20 minutes or until the garlic cloves are golden brown and the aroma fills the kitchen.
Remove the garlic and smash with a fork along with the residual olive oil and white wine. Stir the roasted garlic into the honey. Then, add some split white peppercorns.
Pour the mixture into a jar and seal hermetically. The infused honey will last for at least 2 months.
