Ingredients
5 Eggs
1/2 Cup of milk
1/4 Teaspoon of salt
3 Tablespoons of coconut oil
60 Grams of psyllium husks
40 Grams of chia seeds
40 Grams of pumpkin seeds
40 Grams of sunflower seeds
20 Grams of quinoa

RECIPE
CLASSIC
3/4 cup organic brown sugar
3 Tbsp. oil (light olive, coconut, or vegetable will all work)
2 Tbsp. almond milk (or other non-dairy milk)
2 tsp. vanilla extract
1 cup all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/2 cup vegan chocolate chips (I used some made by Enjoy Life)
GLUTEN-FREE
All the ingredients are the same as the classic cookies, except for the flour– use 1 1/2 cups gluten-free oat flour instead of the all-purpose flour.
Preheat oven to 350 degrees Fahrenheit. To a bowl, add brown sugar, oil, almond milk, and vanilla. Stir well. Add all-purpose flour, or oat flour (depending on which version you are making), baking powder, baking soda, and salt. Stir well. Add chocolate chips, and stir in. Scoop dough into rounds, and press onto baking pans. Bake 8-12 minutes (depending on how soft or crunchy you like your cookies). Let the cookies cool a couple of minutes on the pan. Each recipe makes one dozen cookies.
