Stevia sugar features high sweetness and low calorie and its sweetness is 200 350 times of that of cane sugar but its calorie is only 1/300 of that of cane sugar.
The component of stevia extract that gives it its sweetness is a mixture of various steviol glycosides. The components of sweetness in stevia leaves are stevioside, rebaudioside A, C, D, E and dulcoside A. Rebaudioside C, D, E and dulcoside A are small in quantity. The principal components are stevioside and rebaudioside A.
The quality of stevioside and rebaudiosideA is better than those of other components, which are commercially extracted and used in various applications.
The steviol glycosides present in stevia extract are referred to as “steviosides” or ¡°stevia extract¡±. Among these “steviosides”, the most common is Stevioside followed by RebaudiosideA. The Stevioside has a slight and pleasant herbal taste and the Rebaudioside-A has no herbal taste.
Although Rebaudioside C and dulcoside A are small in quantity in stevia extract, they are the major components giving bitter aftertaste.

I wanted to share this recipe ahead of Vegan MoFo because my theme this year is going to be Vegan Cultured Cheese and one of the recipe that I’m planning uses the leftovers from making hemp milk. It’s going to be a delicious, dreamy Vegan Month of Food.
In preparation for this tutorial, I reached out to Manitoba Harvest, a Canadian producer of hemp foods to see if they wanted to be a part of it. EASY HEMP MILK RECIPE

Ingredients:
1/2 cup shelled hemp hearts
5 cups water, divided
2 tablespoons molasses
1 teaspoon vanilla extract
pinch sea salt
Directions:
Combine the all the ingredients in a blender.
Blend on high for one to two minutes or until mixture is super smooth.
Strain the hemp milk through a nut milk bag, a jelly bag or a few layers of cheesecloth.
Taste and adjust for sweetness.
Serve immediately or store in the fridge for 3 to 5 days. This type of milk can separate over time; just give it a stir before serving.
Notes:
I love this hemp milk with my coffee, especially with cinnamon and other warming spices.
Also, don’t throw out the hemp heart solids after you strain the milk. You can use it in place of tahini in hummous recipes or to make hemp heart cheeses.
